100% Homemade Whole Wheat Bread

Ok, I know it's not the best picture. But I was so excited!!! I made bread!!! And not only bread, healthy, full of nutrients whole wheat bread!! I milled the grain!!! Anyways, I've had the idea of baking bread since many weeks ago, and finally, I did it!!! The hubs LOVED it! So, here's what I did based on Carrie's recipe.
I used:
  • 1/6 cup coconut oil
  • 1 1/4 cups warm water
  • 3 1/2 cups whole wheat flour, divided in 2 and 1 1/2 (I milled 2 1/3 cups wheat)
  • 1/6 cup honey
  • 3/4 tbsp active dry yeast
  • 1/2 tbsp sea salt

First I milled the wheat...

two...

three times...

Then, in a mixing bowl added 1 1/2 cups flour, honey, water and yeast. Stir and cover with clean kitchen towel in a warm place (I turn my oven on at the lowest temperature for 1 minute, then turned it off and left the bowl in there, covered).

After 30 minutes. I don't know it it's normal to see this. But I guess it is.

Now, I added salt to the other 2 flour cups.

Add dry mixture to wet mixture and stir until well combined.

Knead with hands for a minute. Then with rolling pin make a rectangle. Carrie called for a 12X9 in. rectangle.

Now, roll it up and place it in bread pan, seam side down, and cover with kitchen towel again for 30 minutes in warm place. (Again, did the oven thing).

30 minutes later, I had this.

I added a pinch of black sesame seeds and a pinch of rolled oats as toppings.

Bake at 350°F (let the oven reach that temperature before baking bread) for 20 minutes, or until a knife is inserted and comes out clean.

And ta-da!!!

Smaller than I thought. But then again, my pan is not for bread, is for uhhmmmm panqué.

It looked and smelled divine. Really, the hubs loved it. With a little organic butter. And with turkey breast and fresh cheese. And avocado.
