Enchiladas Rojas {Red Enchiladas}: They can be filled with either fresh cheese or chicken. They are topped with shredded fresh cheese. The tortillas are submerged in red salsa made of chile cascabel and ancho, or guajillo. The side are potatoes and carrots, fried in boiling oil.
