So, after looking Weelicious video I couldn't wait to make these for the hubs (and of course practice for the kids we will have later ... later .... later), so I gathered all my stuff and got to work on them. They are really nice, they are healthy, a good alternative, beautiful, and best of all, homemade! So, give them a try and let me know how it goes =)
I used:
- 2 large potatoes, cubed
- 2 carrots, cubed
- 1 cup broccoli florets
- 1/2 tsp kosher salt
- 1/2 tsp garlic powder
- 2 whisked eggs
- 1 cup breadcrumbs (Italian)
- 1/4 cup flour
- cookie cutters
Cut potatoes in cubes.
Place potatoes peeled and carrots in boiling water for 20 minutes.
Chop broccoli florets...
...and in last 5 minutes of cooking time add them to boiling water.
In a food processor add carrots and broccoli.
Mash potatoes a little.
Add veggies mix to mashed potatoes.
Add salt and garlic powder.
Mix with spatula.
Spread in sheet tray to be 1/2“ thick. I used several parchment papers and some plates.
Place 30 minutes – 1hr in freezer.
Cut with cookie cutters.
Pass through flour, eggs and breadcrumbs. You can freeze them in this step.
Place in baking sheet covered in parchment paper.
Broil for 2 minutes on each side.
And enjoy with BBQ sauce, organic ketchup, mustard, whatever you prefer!
