No-Bake Red Fruits Cheesecake


Happy Valentine's Day!

On this special Valentine's day I decided to prepare a cheesecake for my husband. He loves cheesecakes, and I haven't done any in a long time. So, I went and gathered all the ingredients and prepared it a day before. Here goes the recipe.

I used:
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup blackberries
  • 1 cup strawberries
  • 200 g Maravillas cookies (or Grahams)
  • 1 tsp vanilla extract
  • 1/3 cup boiling water
  • 2 envelopes of Knox unflavored gelatine
  • 1 1/3 stick unsalted butter
  • 2 Philadelphia cream cheese packs (8oz ea)
  • 1 can sweetened condensed milk (La Lechera, Borden, etc)
  • 1 cup sugar



For the crust:

Preheat oven to 375°F. Place cookies in a food processor.  


Pulse until cookies become fine dust.


Add melted butter.


Mix with hands and press in a round pie pan.


Place in oven for 10-12 min. Remove and let cool for 5 minutes. It won't be hard, but eventually, cooled, will become harder.
Top with mini semi-sweet chocolate chips (optional).


For the cheesecake:

Place cream cheese, sweetened milk and vanilla in a blender.


Mix boiling water with gelatine in a small cup and place quickly in blender.


Blend until well combined.


Place in pie crust.


Place it in the refrigerator.


For the jelly (optional) and red fruits:

Bring to boil 1 cup water and half the fruits: 1/2 cup of each one of the berries. When it starts boiling, crush them with potato masher and add sugar. 


Lower heat and stir occasionally, until it starts becoming thicker. 


Let it cool completely (I left it overnight).


Top cheesecake with a layer of jelly.


Top with remaining fruit, making the design you prefer.



You can definitely skip the fruit, the jelly and the chocolate.

  1. friend se ve deli... lástima soy alérgica a las berries... bueno menos a las strawberries... pero las otras berrys las podemos sustituir por cherrys... encantada de probar tu sampler cuando lo hagas con cherrys jajajajajajaja
